Step-by-Step Instructions for Grinch Crinkle Cookies
  1. In a large mixing bowl, combine self-raising flour with vegan margarine. Rub the margarine into the flour until the mixture resembles fine crumbs.
  2. Stir in caster sugar until evenly distributed.
  3. In a separate cup, mix together vanilla extract, lemon extract, and soy milk. Add to the dry ingredients along with lime green food coloring, stirring until a dough forms.
  4. Mix until a cohesive dough forms, adjusting with soy milk or flour if needed.
  5. Wrap the dough in plastic wrap and chill in the refrigerator for 30 minutes.
  6. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
  7. Once chilled, divide the dough into 12 equal portions, roll each into a ball, and coat in icing sugar.
  8. Lightly flatten each dough ball before placing them on the baking tray.
