  • 1 medium Red Onion finely diced
  • 1 medium Cucumber peeled and diced

Method
 

Preparation Steps
  1. Wash and chop the fresh ingredients: dice the red onion, Roma tomatoes (keeping their juices), jalapeños, and cucumber into small pieces.
  2. In a large mixing bowl, add the drained and rinsed garbanzo beans along with the prepared vegetables and fresh cilantro. Gently fold them together.
  3. Pour in the freshly squeezed lime juice and sprinkle salt and pepper to taste. Mix everything together.
  4. Cover the bowl and place it in the refrigerator for at least 1 hour to marinate.
  5. Adjust seasonings if needed, stirring gently to combine.
  6. Serve chilled, either by themselves or alongside crispy tortilla chips.
