- Pat the trout fillets dry with paper towels and season with Italian seasoning and salt. Set aside.
- Pour olive oil into a skillet and heat over medium heat for 2-3 minutes.
- Place trout skin-side up in the skillet, cooking undisturbed for 3-5 minutes.
- Flip the trout to cook skin side down for an additional 2-4 minutes.
- Remove from heat and cover for 5-10 minutes to let it rest.
- Transfer trout to a serving plate, separating from the skin.
- In the same skillet, add garlic, lemon juice, and white wine and cook for 1 minute.
- Remove from heat and stir in butter and parsley until melted.
- Return the trout to the skillet, spooning the sauce over it before serving.
