- Season cod fillets with salt and pepper. Heat olive oil in a skillet over medium heat; sear fillets for 2-3 minutes each side.
- Mix diced tomatoes, sun-dried tomatoes, green onions, celery, and red onion in a bowl. Drizzle with balsamic vinegar and olive oil; season to taste.
- Bake flatbread for approximately 10 minutes until edges are golden brown.
- Layer cooked cod and topping mixture on the baked flatbread. Sprinkle with mozzarella cheese.
