  • 1 tablespoon Balsamic vinegar can substitute with any vinegar
  • 1 tablespoon Olive oil
For the Cheese
  • 1 cup Mozzarella cheese can substitute with vegan cheese

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C). Allow store-bought flatbread to come to room temperature.
  2. Season cod fillets with salt and pepper. Heat olive oil in a skillet over medium heat; sear fillets for 2-3 minutes each side.
  3. Mix diced tomatoes, sun-dried tomatoes, green onions, celery, and red onion in a bowl. Drizzle with balsamic vinegar and olive oil; season to taste.
  4. Bake flatbread for approximately 10 minutes until edges are golden brown.
  5. Layer cooked cod and topping mixture on the baked flatbread. Sprinkle with mozzarella cheese.
  6. Return to oven and bake for an additional 5-7 minutes until cheese is melted.
  7. Let cool for a couple of minutes before slicing into pieces.
