  • 1 teaspoon Salt Can be omitted for lower sodium.

Equipment

  • Mixing Bowl
  • Whisk
  • Resealable plastic bag

Method

Preparation
  1. In a large mixing bowl, combine the lime juice, vegetable oil, chipotle paste, chili powder, sweet paprika, chopped cilantro, cumin powder, onion powder, oregano, garlic powder, pepper, and salt. Stir vigorously for about 2 minutes until well blended.
  2. Take your desired chicken pieces and place them in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, coating each piece completely. Massage gently to infuse flavor.
  3. Seal the bag tightly or cover the dish with plastic wrap. Marinate in the refrigerator for at least 30 minutes, preferably up to 6 hours.
  4. Preheat your grill, oven, or skillet to medium-high heat. Remove chicken from the marinade, letting excess liquid drip off. Cook for 6-8 minutes on each side for smaller cuts or 15-20 minutes for larger pieces until fully cooked.
