  • 2 cloves Garlic Minced
  • 1 cup Red Bell Pepper Chopped
  • 1 cup Green Onions Chopped, for garnish
  • 1 cup Cheddar Cheese Shredded
  • 1 cup Mozzarella Cheese Shredded
  • 1 cup Corn Kernels Canned or frozen

Step-by-Step Instructions
  1. Poach the Chicken by placing chicken breasts in a large pot with water; bring to a boil and cook for 20-30 minutes until tender.
  2. Caramelize the Onions by heating oil in a skillet, adding red onions, and cooking for 10-15 minutes until golden; sprinkle brown sugar and cook for an additional 2-3 minutes.
  3. Preheat Your Oven to 425°F (220°C) for achieving a bubbly golden top.
  4. Mix the Ingredients in a large bowl: combine cream cheese, ranch dressing, BBQ sauce, garlic, red bell pepper, green onions, cheddar and mozzarella cheese, corn, and shredded chicken; fold in caramelized onions.
  5. Transfer to Baking Dish: pour the mixture into a greased oven-safe dish, smooth it out, and drizzle additional BBQ sauce on top.
  6. Bake Until Bubbly for about 20-25 minutes, monitoring for a bubbly top and golden edges.
  7. Garnish & Serve by letting the dip cool a couple of minutes, adding more BBQ sauce and freshly chopped green onions; serve warm with chips or veggies.
