- In a large mixing bowl, combine ½ cup sugar with 1 cup of boiling water. Whisk vigorously for about 2–3 minutes until the sugar is completely dissolved.
- Add 3 tablespoons of gelatin to the sugar-water mixture, stirring gently. Allow this to sit for 2 minutes to soften and fully dissolve.
- Gradually whisk in 1 cup of milk followed by 1 can (14 oz) of full-fat coconut milk until smooth.
- Optional: Add ½ teaspoon of almond extract and whisk well to incorporate.
- Carefully pour the mixture into molds, leaving space at the top for expansion.
- Place the filled molds in the refrigerator for at least 4 hours or until set.
- For easy unmolding, briefly dip the bottom of the molds in hot water for about 10 seconds, then gently pull them out.
- Serve chilled, garnished with fresh fruits, coconut flakes, or chocolate sauce.
