Step-by-Step Instructions
  1. In a large mixing bowl, combine ½ cup sugar with 1 cup of boiling water. Whisk vigorously for about 2–3 minutes until the sugar is completely dissolved.
  2. Add 3 tablespoons of gelatin to the sugar-water mixture, stirring gently. Allow this to sit for 2 minutes to soften and fully dissolve.
  3. Gradually whisk in 1 cup of milk followed by 1 can (14 oz) of full-fat coconut milk until smooth.
  4. Optional: Add ½ teaspoon of almond extract and whisk well to incorporate.
  5. Carefully pour the mixture into molds, leaving space at the top for expansion.
  6. Place the filled molds in the refrigerator for at least 4 hours or until set.
  7. For easy unmolding, briefly dip the bottom of the molds in hot water for about 10 seconds, then gently pull them out.
  8. Serve chilled, garnished with fresh fruits, coconut flakes, or chocolate sauce.
