Step‑by‑Step Instructions
  1. Prepare Noodles: Boil water, add udon noodles, cook for 3-4 minutes, drain, rinse with cold water, and drizzle with neutral oil.
  2. Cook Vegetables: Heat oil in pan, sauté garlic for 1 minute, add mushrooms and stir-fry for 2-3 minutes, then add onions and carrots; season, then set aside.
  3. Cook Shrimp: In the same pan, heat oil, add shrimp with soy sauce; cook for 2-3 minutes until pink.
  4. Add Noodles: Toss cooked noodles with shrimp for 2 minutes on high heat.
  5. Combine: Pour sauce over noodles, mix in sautéed vegetables, and heat through.
  6. Garnish and Serve: Add spring onions before serving hot.
