Ingredients
  

For the Pork
  • 2 pounds Pork Chops Thick-cut, can substitute with pork loin or belly.
  • 1/4 cup Shaoxing Wine Dry sherry or dark rum can be used as a substitute.
  • 3 tablespoons Soy Sauce Use tamari for gluten-free.
  • 1 tablespoon Sesame Oil Optional.
For the Coating
  • 1/2 cup Cornstarch Can be substituted with arrowroot flour.
  • 1/2 cup Rice Flour Additional cornstarch can be used instead.
  • to taste White & Black Pepper Season according to preference.
For the Flavor
  • 3 Jalapeños Adjust quantity based on spice level.
  • 3 cloves Garlic Fresh garlic ensures the best flavor.
  • 1 tablespoon Szechuan Peppercorns Black pepper can be an alternative.
For Frying
  • 2 tablespoons Vegetable Oil Peanut oil can be used for a different flavor.

Method
 

Preparation Steps
  1. Cut the pork chops into 1-inch pieces. Combine with Shaoxing wine, soy sauce, sesame oil, cornstarch, and a pinch of salt. Marinate for 5 to 10 minutes.
  2. Create a chili paste by mashing garlic, Szechuan peppercorns, and jalapeños in a mortar and pestle. Set aside.
  3. Thinly slice remaining chili peppers and garlic. Heat vegetable oil in a frying pan over medium-high heat, add peppers and garlic, frying for 1 minute. Transfer to a plate.
  4. Mix remaining cornstarch, rice flour, and white pepper. Toss marinated pork pieces in this mixture until well-coated.
  5. Heat more vegetable oil in the frying pan over medium-high heat. Fry coated pork for 2-3 minutes per side until golden brown and crispy.
  6. Remove pork from pan and drain on paper towels. Stir-fry the chili paste in the same pan for 30 seconds, then return pork and toss to combine.
