Lentils
  • 1 cup green or brown lentils rinsed
  • 4 cups vegetable broth or water
Aromatic Base
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil or neutral oil
Spices
  • 1 teaspoon cumin adjust to taste
  • 1 teaspoon paprika smoked paprika for extra flavor

Greens and Toppings
  • 2 cups fresh greens spinach or kale
  • 1 large egg poached or fried
  • 1 medium avocado diced or as guacamole

Method
 

Build the Aromatic Base
  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until translucent (about 3-4 minutes).
Toast the Spices and Lentils
  1. Stir in cumin and paprika, add the rinsed lentils, and toast for 1 minute.
Cook the Lentils
  1. Pour in vegetable broth, bring to a simmer, cover and cook for 20-25 minutes until tender.
Prepare the Toppings
  1. In a separate pan, heat olive oil and sauté the greens for 3-4 minutes. Prepare the egg in your preferred method.

  1. Layer lentils in a serving bowl, top with greens, avocado, and egg.
