Step-by-Step Instructions for Korean Pot Roast
  1. Preheat your oven to 350°F (175°C) with the rack positioned in the lower third.
  2. Pat your chuck roast dry and season generously with kosher salt.
  3. In a large Dutch oven, heat oil and brown the chuck roast on all sides for about 10 minutes.
  4. Remove the beef and sauté the sweet onion for 4 minutes until softened, then add garlic and ginger for an additional minute.
  5. Stir in gochujang paste, brown sugar, and soy sauce, mixing until well-blended.
