  • 1 tablespoon Butter
  • 1 cup Green Bell Pepper diced
  • 1 cup Red Bell Pepper diced
  • 1 medium Yellow Onion chopped
  • 2 stalks Escallion (Green Onion) chopped
  • 1 tablespoon Fresh Thyme or 1 tsp of dried thyme
  • 1 small Scotch Bonnet Pepper chopped
For the Sauce
  • 1 can Coconut Milk
  • 2 tablespoons Ketchup optional

Step-by-Step Instructions for Jamaican Curry Shrimp
  1. Begin by seasoning the raw shrimp with garlic powder, curry powder, black pepper, and salt in a mixing bowl. Set aside.
  2. In a large saucepan, heat olive oil and butter over medium-high heat. Add curry powder and stir continuously for about 1 minute.
  3. Add diced green and red bell peppers and chopped yellow onion to the pan. Sauté for about 5 minutes until softened.
  4. Stir in fresh thyme and chopped scotch bonnet pepper, and then pour in the coconut milk. Season and let it simmer for about 2 minutes.
  5. Introduce the marinated shrimp to the pan and cook for 2 to 3 minutes until pink and opaque.
  6. If needed, thicken the sauce with a cornstarch slurry, cooking for an additional minute.
  7. Taste for seasoning, adjust, and serve hot with steamed rice or naan.
