Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Drizzle extra virgin olive oil into a medium skillet over medium heat.
  3. Sauté the diced red onion for about 2 minutes until soft.
  4. Add the minced garlic and diced red bell pepper, sauté for another 2 minutes.
  5. Fold in the diced tomato, simmer for 3 to 4 minutes.
  6. Crumble feta cheese over the vegetable mixture and season with oregano, salt, and pepper.
  7. Create four wells in the mixture and crack an egg into each well.
  8. Bake for 10 to 12 minutes until egg whites are set.
  9. Let cool for about 5 minutes and garnish with fresh parsley.
  10. Serve warm alongside crusty bread.
