Step-by-Step Instructions
  1. In a large bowl, mix together salsa verde, olive oil, lime juice, cumin, salt, and black pepper. Add the chicken breasts, ensuring they're thoroughly coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, but up to 2 hours for maximum flavor infusion.
  2. Preheat your grill to medium-high heat, around 375°F to 450°F. Clean and lightly oil grill grates to prevent sticking.
  3. Remove the chicken from the marinade and discard any remaining liquid. Place the chicken on the grill and cook for about 4 to 5 minutes per side, aiming for an internal temperature of 165°F.
  4. In the last minute of grilling, place a slice of pepper Jack cheese on each chicken breast and close the grill lid.
