  1. Begin by placing a large skillet over medium-high heat. Add olive oil and butter, allowing them to melt and shimmer for about 1-2 minutes.
  2. Once the oil is hot, add diced onion and sliced mushrooms. Sauté for about 4-5 minutes, until the onions are translucent and the mushrooms are nicely browned.
  3. Carefully transfer the onions and mushrooms to a plate and set aside. Drizzle in more olive oil if needed.
  4. In the same skillet, add sliced zucchini and cook for about 3-4 minutes, tossing occasionally, until they are tender with a light golden crust.
