Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Peel and halve the fresh carrots lengthwise, then toss with olive oil, salt, pepper, and smoked paprika.
  3. Spread the seasoned carrots cut-side down on the baking sheet and roast for 25-30 minutes, flipping halfway through.
  4. Mix ricotta cheese, cream (or milk), and lemon zest in a food processor until smooth and airy; refrigerate.
  5. In a saucepan, warm honey with red pepper flakes for 3-4 minutes; stir in apple cider vinegar and let cool.
  6. Spread whipped ricotta on a serving platter, top with roasted carrots, and drizzle with hot honey.
  7. Serve immediately and enjoy the contrast between creamy ricotta and spicy honey.

Notes
