- Gently fold in the chopped pistachios, honey, and vanilla extract into the blended ricotta.
- Using your clean hands, scoop out a tablespoon of the mixture and roll it into small balls or logs, about 1 inch in diameter.
- Spread additional chopped pistachios on a plate and roll each shaped bite in the nuts until fully coated.
- Place the tray of coated Ricotta Pistachio Honey Bites in the refrigerator. Let them chill for at least 30 minutes.
