  3. In a large bowl, whisk together olive oil, Dijon mustard, whole grain mustard, garlic powder, onion powder, salt, and pepper until smooth.
  4. Add the halved potatoes to the mustard mixture and toss until fully coated.
  5. Arrange the coated potatoes in a single layer on a parchment-lined baking sheet.
  6. Roast in the oven for 25 to 30 minutes, stirring halfway through.
  7. Remove from oven, allow to cool slightly, and garnish with fresh parsley before serving.
