- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan, then line it with parchment paper for easy removal.
- In a large mixing bowl, whisk together the mashed ripe bananas, eggs, brown sugar, vegetable oil or melted butter, molasses, and vanilla extract until smooth.
- In a separate bowl, whisk together the flour, baking soda, baking powder, salt, ground ginger, cinnamon, nutmeg, and cloves.
- Gently add the dry mixture to your wet ingredients, stirring until just combined.
- If desired, gently fold in your chopped walnuts or pecans and crystallized ginger at this stage.
- Pour the luscious batter into the prepared loaf pan and use a spatula to smooth the surface.
- Place the loaf pan in your preheated oven and bake for 50 to 55 minutes.
- Once baked, remove the pan from the oven and let it cool in the pan for about 10 minutes.
