  • 2 medium Zucchini fresh, avoid frozen
  • 1 cup Cherry Tomatoes halved
  • 1 medium Red Onion diced
  • 3 cloves Garlic minced
For the Seasoning
  • 2 tablespoons Olive Oil or light oil
  • 1 teaspoon Dried Oregano or fresh
  • 1 teaspoon Dried Basil or Italian seasoning
  • 1 teaspoon Smoked Paprika or regular paprika
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1/2 teaspoon Red Pepper Flakes to taste
For the Toppings
  • 1 cup Mozzarella Cheese or feta for variation
  • 1/2 cup Parmesan Cheese or nutritional yeast for dairy-free
  • 1/4 cup Fresh Parsley for garnish

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C). Grease a baking dish with olive oil.
  2. In a bowl, mix chicken, zucchini, tomatoes, onion, and garlic. Add olive oil and seasonings, tossing well.
  3. Transfer the mixture to the baking dish, spreading evenly, then top with mozzarella and Parmesan cheese.
  4. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is golden and chicken is cooked through.
  5. Let sit for a few minutes, garnish with parsley, and serve warm.
