For the Caramelized Topping
  • ½ cup Granulated Sugar For caramelizing

Method
 

Preparation Steps
  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the unsalted butter and sugar blend until pale and fluffy.
  3. Add the egg and vanilla extract, beating until fully combined.
  4. In a separate bowl, whisk together the all-purpose flour and baking powder.
  5. Fold the dry ingredients into the butter mixture until just combined.
  6. Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes.
  7. Scoop the dough onto prepared baking sheets, leaving space between each scoop.
  8. Bake for 10-12 minutes until edges are golden brown and centers remain soft.
  9. Cool the cookies on the baking sheets for about 5 minutes, then transfer to a wire rack.
  10. Drizzle lemon curd onto each cookie and sprinkle with granulated sugar.
  11. Caramelize the sugar topping with a kitchen torch or under a broiler.
  12. Allow the caramelized sugar to cool before serving.
