Step-by-Step Instructions
  1. Preheat your oven to 300°F (150°C). Gather your baking materials.
  2. Combine the unbleached all-purpose flour, icing sugar, salt, grapefruit zest, and fresh thyme in a food processor.
  3. Gradually add cubed vegan butter and process until a rough dough forms.
  4. Transfer the dough to your fluted tart pan and press it evenly across the bottom.
  5. Bake for 35-40 minutes until firm and lightly golden at the edges.
  6. Let the cookies cool slightly, then cut them into 16 squares or rectangles.
  7. Combine freshly squeezed grapefruit juice with sifted icing sugar for the icing.
  8. Dip the tops of each cookie into the icing and allow excess to drip off.
  9. Sprinkle fresh thyme or pearl sugar on top of the wet icing, then let the cookies rest until the icing hardens.
