For the Crust
  • 2 each Pre-Made Pie Crusts Homemade crusts can add a personal touch.
  • 1 each Beaten Egg (for egg wash) Milk can be a suitable alternative.

Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C) to ensure even baking.
  2. Heat olive oil in a skillet. Sauté the onion and garlic for 3-4 minutes until translucent.
  3. Add diced carrot and celery; cook for 5 minutes until softened.
  4. Pour in heavy cream and stock, simmer for 2-3 minutes.
  5. Fold in lobster meat and peas, simmer for 5 minutes.
  6. Remove from heat and stir in thyme, lemon juice, salt, and pepper.
  7. Roll out one pie crust, fit it into a pie dish.
  8. Spoon filling into crust, cover with second crust, cut slits for steam.
  9. Brush the top crust with beaten egg.
  10. Bake for 30-35 minutes until golden brown.
  11. Cool for 10-15 minutes before serving.

Notes
