Ingredients
  

For the Salad
  • 6 cups Green Leaf Lettuce or romaine for extra crispness
  • 2 medium Vine-Ripened Tomatoes chopped
  • 0.5 medium Red Onion chopped
  • 0.5 cups Pepperoncini Peppers sliced
  • 3 ounces Salami cut into bite-sized pieces
  • 0.5 cups Green Olives (with Pimento) sliced
  • 1 cup Chick Peas (Garbanzo Beans) drained and rinsed
  • 3 ounces Pepperoni optional, cut into bite-sized pieces
  • 14 ounces Artichoke Hearts drained and quartered
  • 0.5 cups Black Olives whole or sliced
  • 1 cup Mozzarella Cheese grated
For the Dressing
  • 0.5 cups Extra Virgin Olive Oil
  • 0.25 cups Red Wine Vinegar
  • 1 teaspoon Garlic Powder or fresh minced garlic
  • 1 tablespoon Dried Italian Herbs
  • 2 tablespoons Parmesan Cheese optional

Method
 

Preparation Steps
  1. Wash and dry the lettuce, then tear it into bite-sized pieces and place in a large serving bowl.
  2. Chop tomatoes and red onion, and scatter them over the lettuce along with sliced pepperoncini.
  3. Cut salami and pepperoni into bite-sized pieces and sprinkle over the vegetables.
  4. Add chickpeas to the salad.
  5. Disperse sliced green olives and black olives over the top.
  6. Arrange quartered artichoke hearts amongst the toppings.
  7. Grate mozzarella cheese and sprinkle over the salad.
  8. Cover and chill in the refrigerator for at least 30 minutes.
  9. In a mason jar, combine olive oil, red wine vinegar, garlic powder, and dried herbs. Shake to mix.
  10. Serve the chilled salad with dressing on the side.
