  • 100 grams Plain (All-Purpose) Flour Substitute with gluten-free flour if needed.
  • 30 grams Cornflour (Cornstarch) Do not substitute with regular flour.
  • 150 grams Caster or Granulated Sugar Avoid liquid sugars.
  • 1 teaspoon Baking Powder Do not substitute with baking soda.
  • 150 grams Plain Soy Yogurt Other plant-based yogurts can be used.
  • 100 grams Vegan Butter/Spread (melted) Ensure it's not a light version.
  • 50 milliliters Undiluted Elderflower Cordial
  • 2 lemons Lemon Zest and Juice Use unwaxed lemons.
For the Drizzle
  • 50 milliliters Elderflower Cordial Combine with lemon juice.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180℃ (160℃ for fan ovens) or 350℉, and grease a suitable baking dish with vegan butter or cooking spray.
  2. In a large mixing bowl, combine the ground almonds, plain flour, cornflour, caster sugar, and baking powder. Whisk together until evenly mixed.
  3. Add the plain soy yogurt, melted vegan butter, elderflower cordial, and lemon zest to the dry ingredients. Stir until smooth.
  4. Pour and spread the batter into the prepared baking dish, leveling the surface.
  5. Bake for 30-40 minutes, checking for doneness with a skewer.
  6. While the pudding bakes, mix elderflower cordial and lemon juice for the drizzle.
  7. Once cooled for 5 minutes, poke holes in the pudding and pour the drizzle over the surface.
