- Preheat your oven to 180℃ (160℃ for fan ovens) or 350℉, and grease a suitable baking dish with vegan butter or cooking spray.
- In a large mixing bowl, combine the ground almonds, plain flour, cornflour, caster sugar, and baking powder. Whisk together until evenly mixed.
- Add the plain soy yogurt, melted vegan butter, elderflower cordial, and lemon zest to the dry ingredients. Stir until smooth.
- Pour and spread the batter into the prepared baking dish, leveling the surface.
- Bake for 30-40 minutes, checking for doneness with a skewer.
- While the pudding bakes, mix elderflower cordial and lemon juice for the drizzle.
- Once cooled for 5 minutes, poke holes in the pudding and pour the drizzle over the surface.
