Ingredients
  

For the Soup Base
  • 2 tablespoons Coconut Oil or olive oil
  • 1 medium Red Onion chopped
  • 1 medium Red Bell Pepper chopped
  • 1 medium Carrot pre-boiled for tenderness
  • 3 cloves Garlic minced
  • 1 teaspoon Kosher Salt
For the Creamy Mix
  • 1 can Coconut Milk full-fat preferred
  • 1 cup Water or Broth
For the Protein and Noodles
  • 2 cups Rotisserie Chicken shredded
  • 3 packs Ramen Noodles discard seasoning packet
For the Seasoning
  • 1 teaspoon Turmeric or curry powder
  • 1 teaspoon Sweet Paprika or smoked paprika
  • to taste Hot Sauce

Method
 

Step-by-Step Instructions
  1. Bring a small pot of water to a rolling boil over high heat. Add the carrot pieces and cook for about 3-4 minutes until slightly tender. Drain and set aside.
  2. In a large pan, heat coconut oil until melted. Add chopped onion and sauté for 4-5 minutes until soft and translucent.
  3. Stir in minced garlic and sauté for another minute. Add shredded chicken and chopped red bell pepper, mixing well.
  4. Add pre-boiled carrot pieces and a drizzle of hot sauce. Stir continuously for another minute.
  5. Pour in coconut milk and mix. Add water or broth using the empty coconut milk can as a gauge.
  6. Once bubbling, add ramen noodles. Cook according to package instructions for 3-4 minutes.
  7. Ladle the soup into bowls while hot, garnishing with fresh herbs or a squeeze of lime if desired.
