Method
 

Directions
  1. Preheat your oven to 375°F (190°C).
  2. Peel and thinly slice the potatoes into even pieces, placing them in cold water to prevent browning.
  3. Melt butter in a saucepan, sauté onion until soft, add garlic and thyme, then stir in flour and pour in heavy cream, cooking until smooth.
  4. Remove from heat and stir in cheddar cheese until melted.
  5. In a greased baking dish, layer half of the potatoes, add half of the creamy sauce, and top with half of the cheese. Repeat the layers.
  6. Cover with foil and bake for 40 minutes, then remove foil and bake for another 20 minutes until golden.
  7. Let cool slightly, then garnish with chives or parsley before serving.
