- Preheat your oven to 375°F (190°C).
- Peel and thinly slice the potatoes into even pieces, placing them in cold water to prevent browning.
- Melt butter in a saucepan, sauté onion until soft, add garlic and thyme, then stir in flour and pour in heavy cream, cooking until smooth.
- Remove from heat and stir in cheddar cheese until melted.
- In a greased baking dish, layer half of the potatoes, add half of the creamy sauce, and top with half of the cheese. Repeat the layers.
- Cover with foil and bake for 40 minutes, then remove foil and bake for another 20 minutes until golden.
- Let cool slightly, then garnish with chives or parsley before serving.
