Ingredients
  

Base
  • 1 cup Pecans raw or roasted
  • 1 cup Pitted Dates soak if hard
  • 2 tablespoons Coconut Sugar or Monk Fruit or substitute with maple syrup
  • 1 teaspoon Sea Salt
Flavor
  • 1 teaspoon Vanilla Extract optional
  • 1 teaspoon Cinnamon optional
Coating
  • 1 cup Chocolate Chips use dark or vegan

Method
 

Steps
  1. Soak the pitted dates in hot water for about 15 minutes if they’re not soft. Drain and set aside.
  2. In a food processor, combine pecans, soaked dates, coconut sugar, sea salt, vanilla extract, and cinnamon. Pulse until a sticky dough forms.
  3. Roll small portions of the mixture into balls about an inch in diameter. Place on a lined cookie sheet and slightly flatten them.
  4. Melt chocolate chips over low heat until smooth. Optionally add coconut oil for a glossy finish.
  5. Dip each firm bite into the melted chocolate, then place back on the cookie sheet. Top with a whole pecan if desired.
  6. Freeze for another 30 minutes until the chocolate is hardened. Store in an airtight container in the freezer.
