Steps
- Soak the pitted dates in hot water for about 15 minutes if they’re not soft. Drain and set aside.
- In a food processor, combine pecans, soaked dates, coconut sugar, sea salt, vanilla extract, and cinnamon. Pulse until a sticky dough forms.
- Roll small portions of the mixture into balls about an inch in diameter. Place on a lined cookie sheet and slightly flatten them.
- Melt chocolate chips over low heat until smooth. Optionally add coconut oil for a glossy finish.
- Dip each firm bite into the melted chocolate, then place back on the cookie sheet. Top with a whole pecan if desired.
- Freeze for another 30 minutes until the chocolate is hardened. Store in an airtight container in the freezer.
