- In a skillet over medium heat, cook the thick-cut bacon until it's crispy and golden brown, about 8–10 minutes. Remove the bacon and drain it on paper towels.

- In a separate bowl, mix together brown sugar, cayenne pepper, and black pepper. Coat the crispy bacon with the sugar mixture until well covered, then set it aside to cool completely.

- In a mixing bowl, combine softened goat cheese with hot honey, blending until smooth and creamy, about 2–3 minutes.

- Lay out a large piece of plastic wrap, spread the cooled candied bacon evenly, spoon the goat cheese mixture into the center, and roll tightly into a log shape.

- Wrap and chill the log in the refrigerator for at least 30 minutes or until firm.

- Once chilled, unwrap from plastic wrap, drizzle with hot honey, slice, and serve with crostini.
