Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper. Spread frozen hash browns, drizzle olive oil, and season with salt and pepper. Bake for 20 minutes, flipping halfway.
  2. In a skillet over medium heat, add olive oil and chopped bacon. Cook for 6–8 minutes until crispy. Set aside, letting it cool, and crumble into pieces.
  3. In the same skillet, melt butter and crack in eggs. Cook to preference, seasoning with salt and pepper. Keep warm.
  4. In a double boiler, whisk egg yolks, Dijon mustard, and white wine vinegar for 2 minutes until slightly thickened. Gradually add melted butter until creamy, then stir in lemon juice, cayenne, and garlic powder.
  5. Layer crispy hash browns on a plate, top with eggs and sprinkle cheddar and mozzarella. Drizzle warm gravy, creating a comforting base.
  6. Pour hollandaise sauce over the dish and sprinkle crumbled bacon on top. Serve immediately.
