- Preheat your oven to 425º F (220º C). Place your unbaked pie shell in a 9-inch pie dish.
- Peel and slice the peaches. Arrange them evenly in the bottom of the prepared pie shell.
- In a bowl, whisk together Greek yogurt, egg yolks, sugar, and flour until smooth. Add vanilla, cinnamon, and nutmeg.
- Pour the custard mixture over the peaches in the pie shell.
- Cover the edges of the pie with aluminum foil to prevent over-browning.
- Bake the pie for 30-32 minutes until the edges are firm and the center is slightly jiggly.
- Prepare the topping by whisking flour, sugar, and salt, then cutting in butter until crumbly.
- Sprinkle the topping over the pie and bake for an additional 15 minutes until browned.
