Step-by-Step Instructions
  1. Preheat your oven to 425º F (220º C). Place your unbaked pie shell in a 9-inch pie dish.
  2. Peel and slice the peaches. Arrange them evenly in the bottom of the prepared pie shell.
  3. In a bowl, whisk together Greek yogurt, egg yolks, sugar, and flour until smooth. Add vanilla, cinnamon, and nutmeg.
  4. Pour the custard mixture over the peaches in the pie shell.
  5. Cover the edges of the pie with aluminum foil to prevent over-browning.
  6. Bake the pie for 30-32 minutes until the edges are firm and the center is slightly jiggly.
  7. Prepare the topping by whisking flour, sugar, and salt, then cutting in butter until crumbly.
  8. Sprinkle the topping over the pie and bake for an additional 15 minutes until browned.
  9. Remove the pie from the oven and allow it to cool for about 15 minutes before serving.
