- Preheat your oven to 400°F (200°C).
- In a mixing bowl, pour in the coconut milk and add olive oil, curry powder, ground turmeric, ground ginger, salt, and pepper. Whisk until smooth.
- Spread the cod fillets evenly across your baking dish.
- Pour the coconut curry sauce evenly over the cod fillets.
- Place in the preheated oven and bake for 20 to 25 minutes until flakes easily with a fork.
- Remove from the oven, let cool for a minute, and garnish with fresh cilantro or parsley.
