Chili Base
  • 1 cup green lentils rinsed
  • 1 can black beans drained and rinsed
  • 1 medium white onion diced
  • 1 cup red bell pepper chopped
  • 1 cup green bell pepper chopped
  • 4 cloves garlic minced
  • 1 medium jalapeño chopped and seeds removed
  • 4 cups vegetable broth
  • 1 can crushed tomatoes about 28 ounces
  • 1 cup salsa
  • 1 cup frozen corn
Seasoning
  • 1 tablespoon cumin
  • 2 teaspoons chili powder
  • 1 teaspoon oregano dried or fresh
  • 1 teaspoon smoked paprika
Fresh Touch
  • 1 cup cilantro chopped
  • 1 large lime juiced
  • to taste salt
  • to taste black pepper
Optional Toppings
  • to taste sliced jalapeños
  • to taste sour cream
  • to taste sliced avocado
  • to taste grated cheese
  • to taste crushed tortilla chips

Method
 

Step-by-Step Instructions
  1. Rinse the lentils under cold water to remove any grit. Set aside.
  2. Dice the onion, chop the bell peppers, mince the garlic and jalapeño.
  3. In the slow cooker, add the diced onion, minced garlic, and jalapeño.
  4. Pour in the vegetable broth and crushed tomatoes. Add the spices and stir to combine.
  5. Add the lentils, black beans, bell peppers, salsa, and corn. Mix well.
  6. Cover and cook on HIGH for 5 hours or LOW for 9-10 hours.
  7. Once cooked, adjust seasonings with salt and pepper to taste.
  8. Squeeze lime juice into the chili and fold in cilantro.
  9. Serve with optional toppings as desired.
