Ingredients

  • 1 lb Ground Turkey A lean protein
  • 1 cup Rice Use white, brown, or quinoa
For the Vegetables
  • 2 cups Bell Peppers Any variety
  • 1 cup Zucchini Can swap for eggplant or mushrooms
  • 1 medium Red Onion Can use yellow onion as an alternative
For Seasoning
  • 3 cloves Garlic Minced
  • 2 tbsp Olive Oil Can use avocado oil
  • 1 tsp Paprika Smoked paprika can be used for extra flavor
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet by greasing or lining it with parchment paper.
  2. Chop bell peppers, zucchini, and red onion into bite-sized pieces. In a mixing bowl, combine with olive oil, minced garlic, salt, pepper, and paprika.
  3. Spread the veggie mixture evenly on the baking sheet and roast for about 20 minutes, checking halfway through for tenderness.
  4. In a skillet, heat olive oil over medium heat, add ground turkey, and sauté for 5-7 minutes until fully cooked.
  5. Once cooked, combine the roasted veggies and turkey in a large mixing bowl, gently stirring to mix evenly.
  6. To serve, scoop cooked rice into bowls and top with the turkey and veggie mixture. Garnish with fresh herbs and a drizzle of olive oil or lemon juice if desired.
