- In a large bowl, combine 200g of self-raising flour and 70g of vegan margarine. Use your fingers to rub the margarine into the flour until the mixture resembles coarse crumbs.
- Stir in 150g of caster sugar, mixing until evenly distributed.
- In a separate bowl, whisk together 1 tsp of vanilla extract, 1 tsp of lemon extract, and 2 tbsp of soy milk. Add in ½ tsp of lime green food coloring and mix until combined.
- Combine the wet and dry ingredients, mixing until a cohesive dough forms.
- Wrap the dough in plastic wrap and place it in the refrigerator for 30 minutes.
- Once chilled, divide the dough into 12 equal pieces. Roll each piece into a ball and coat generously in 100g of icing sugar.
- Flatten each sugar-coated dough ball into thick discs about 1.5 inches wide and arrange them on a lined baking sheet.
- Bake the cookies in your preheated oven for 10-12 minutes until crinkled and the centers appear set yet slightly soft.
- Press one red Skittle into the center of each cookie while they are still warm.
- Let the cookies cool completely on the baking tray.
