Ingredients
  

For the Dough
  • 200 g self-raising flour For best results, always use fresh flour.
  • 70 g vegan margarine Can substitute with coconut oil or plant-based butter.
  • 150 g caster sugar Granulated sugar works but may alter texture.
  • 1 tsp vanilla extract Almond extract can be an alternative.
  • 1 tsp lemon extract Can be replaced with more vanilla as needed.
  • 2 tbsp soy milk Other plant-based milks can work as well.
  • 0.5 tsp lime green food coloring Can be omitted or replaced with another color.
For the Coating
  • 100 g icing sugar Powdered sugar can be substituted if needed.
For Topping
  • 12 pieces red Skittles Any red vegan candies can be used.

Method
 

Instructions
  1. In a large bowl, combine 200g of self-raising flour and 70g of vegan margarine. Use your fingers to rub the margarine into the flour until the mixture resembles coarse crumbs.
  2. Stir in 150g of caster sugar, mixing until evenly distributed.
  3. In a separate bowl, whisk together 1 tsp of vanilla extract, 1 tsp of lemon extract, and 2 tbsp of soy milk. Add in ½ tsp of lime green food coloring and mix until combined.
  4. Combine the wet and dry ingredients, mixing until a cohesive dough forms.
  5. Wrap the dough in plastic wrap and place it in the refrigerator for 30 minutes.
  6. Once chilled, divide the dough into 12 equal pieces. Roll each piece into a ball and coat generously in 100g of icing sugar.
  7. Flatten each sugar-coated dough ball into thick discs about 1.5 inches wide and arrange them on a lined baking sheet.
  8. Bake the cookies in your preheated oven for 10-12 minutes until crinkled and the centers appear set yet slightly soft.
  9. Press one red Skittle into the center of each cookie while they are still warm.
  10. Let the cookies cool completely on the baking tray.
