- Wash and peel the potatoes and carrots, then chop them into bite-sized pieces. Season the chicken breasts with salt and pepper.
- Place the chopped potatoes and carrots in the bottom of the slow cooker. Lay the seasoned chicken breasts on top.
- Melt the butter in a small saucepan, add the minced garlic and herbs, and simmer for 2-3 minutes. Pour this sauce over the chicken and vegetables in the crockpot.
- Cover the crockpot and cook on LOW for 6 hours or HIGH for 3-4 hours, until the chicken is cooked through and tender.
- Let the dish rest for 10 minutes after cooking. Garnish with fresh herbs if desired, then serve warm.
