Cooking Steps
  1. Wash and peel the potatoes and carrots, then chop them into bite-sized pieces. Season the chicken breasts with salt and pepper.
  2. Place the chopped potatoes and carrots in the bottom of the slow cooker. Lay the seasoned chicken breasts on top.
  3. Melt the butter in a small saucepan, add the minced garlic and herbs, and simmer for 2-3 minutes. Pour this sauce over the chicken and vegetables in the crockpot.
  4. Cover the crockpot and cook on LOW for 6 hours or HIGH for 3-4 hours, until the chicken is cooked through and tender.
  5. Let the dish rest for 10 minutes after cooking. Garnish with fresh herbs if desired, then serve warm.
