  • 2 medium Tomatoes Ripe, chopped
  • 1 medium Avocado Fold in just before serving
  • 1 medium Jalapeño Diced, adjust heat to taste
  • 1/4 cup Cilantro Optional
  • 1/4 cup Clamato Juice Substitute with tomato juice if needed
  • to taste Salt
  • to taste Pepper

Method
 

Step-by-Step Instructions
  1. Bring a medium pot of water to a rolling boil. Add shrimp, cooking for 1-2 minutes until pink and opaque.
  2. Transfer cooked shrimp to an ice bath for about 3 minutes to cool.
  3. Drain shrimp, pat dry, and dice into bite-sized pieces.
  4. In a glass mixing bowl, combine shrimp with lime and lemon juices, cover and refrigerate for at least 15 minutes.
  5. Add red onion, tomatoes, avocado, and jalapeño to the marinated shrimp, mixing gently.
  6. Season with salt and pepper to taste, adding additional cilantro if desired.
  7. Serve chilled with tortilla chips or on toasted bread.
