Ingredients
  

Noodles
  • 8 oz Flat Rice Noodles Thai Kitchen brand recommended
Vegetables
  • 1 cup Bell Peppers Any color works, red or yellow recommended
  • 2 cups Broccoli Florets Can substitute with green beans or snap peas
  • 1 cup Sliced Carrots Zucchini or thinly sliced cabbage are alternatives
Protein
  • 1 block Tofu Press before cooking
  • 1 lb Chicken Diced
  • 1 lb Shrimp Cleaned
Sauce
  • 1 cup Low-Sodium Soy Sauce Use tamari for gluten-free
  • 2 tbsp Sesame Oil Drizzle at the end for flavor
  • 1 tbsp Fresh Ginger (Grated) Avoid powdered ginger
Cooking Oil
  • 2 tbsp Cooking Oil (Avocado or Vegetable Oil) High smoke-point oils
Garnish
  • 2 tbsp Sesame Seeds Optional
  • 2 stalks Green Onions Optional, sliced

Method
 

Directions
  1. Bring a large pot of water to a rolling boil. Add rice noodles and cook for 4–6 minutes until tender. Drain and rinse under cold water.
  2. Prep the veggies: slice bell peppers, cut broccoli into florets, and slice carrots. Grate ginger. Prepare protein.
  3. Heat a skillet over medium heat with 1 tbsp of oil. Cook the protein until done: tofu for 5-6 minutes; shrimp for 3-4 minutes; chicken for 7-8 minutes. Set aside.
  4. Increase heat to medium-high. Add 1 tbsp oil and stir-fry the carrots for 2 minutes, then add the broccoli, bell peppers, and ginger. Cook for 3–5 minutes until crisp-tender.
  5. Return the protein to the skillet. Add rice noodles and soy sauce. Toss to combine for about 2 minutes.
  6. Drizzle sesame oil, toss again, and serve garnished with sesame seeds and green onions.
