Step-by-Step Instructions
  1. Preheat your oven to 390°F (200°C).
  2. In a mixing bowl, combine the grated cheddar and mozzarella cheeses until well mixed.
  3. In a large bowl, combine 1 cup of red enchilada sauce with the cream cheese and fold in half of the cheese mixture and shredded chicken until coated.
  4. Spread the chicken mixture evenly into a greased 9x13 inch casserole dish.
  5. Top the chicken mixture with the remaining cheese and drizzle the rest of the red enchilada sauce over the top, then sprinkle with green chilies.
  6. Bake for 15-20 minutes until the cheese is melted and bubbly.
  7. Let the casserole cool for a few minutes, then garnish with fresh cilantro and lime juice before serving.
