Preparation Steps
  1. Preheat your oven to 350°F (175°C). Line a jelly roll pan with parchment paper.
  2. Beat room temperature eggs with granulated sugar for about 3 minutes until pale and forms a ribbon.
  3. Gently fold in vanilla extract. Sift together flour, baking powder, and salt; add them to the bowl and mix just until combined.
  4. Pour the batter into the prepared pan and spread evenly. Bake for 10-12 minutes until golden.
  5. Dust a kitchen towel with powdered sugar, flip the warm cake onto the towel, and roll tightly. Let it cool completely.
  6. Whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  7. Unroll the cake, spread the whipped cream filling, and sprinkle colorful sprinkles. Re-roll the cake without the towel.
  8. Drizzle melted white chocolate over the cake and add extra sprinkles. Chill in the refrigerator for at least 30 minutes.
