Preparation Steps
- Preheat your oven to 350°F (175°C). Line a jelly roll pan with parchment paper.
- Beat room temperature eggs with granulated sugar for about 3 minutes until pale and forms a ribbon.
- Gently fold in vanilla extract. Sift together flour, baking powder, and salt; add them to the bowl and mix just until combined.
- Pour the batter into the prepared pan and spread evenly. Bake for 10-12 minutes until golden.
- Dust a kitchen towel with powdered sugar, flip the warm cake onto the towel, and roll tightly. Let it cool completely.
- Whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Unroll the cake, spread the whipped cream filling, and sprinkle colorful sprinkles. Re-roll the cake without the towel.
- Drizzle melted white chocolate over the cake and add extra sprinkles. Chill in the refrigerator for at least 30 minutes.
