Steps to Prepare
- Prepare crêpes by whisking together the crêpe mix until smooth, then cook in a preheated non-stick skillet for about 1-2 minutes on each side.
- Make the vanilla cream by whipping heavy cream with powdered sugar and vanilla extract until soft peaks form.
- Warm the Speculoos spread in the microwave for 15-20 seconds until it’s smooth and pourable.
- Assemble the cake by layering crêpes with vanilla cream and Speculoos spread, repeating until all layers are stacked.
- Chill the assembled cake in the refrigerator for at least 4 hours or overnight.
- Finish by dusting the top with powdered sugar and optionally topping with crushed Speculoos cookies before serving.
