- Begin by pressing the firm or super-firm tofu to remove excess moisture. Wrap it in a clean kitchen towel and place a heavy object on top for about 15 minutes.
- In a large mixing bowl, combine the crumbled tofu with tamari, garlic, onion, tomato paste, and flour. Add the fresh herbs and all the spices, and mix thoroughly until well combined.
- Scoop about 1/4 cup of the mixture and shape it into a log or patty. Aim for around 9 kebabs and place them on a lined baking sheet.
- Preheat your oven to 375°F (190°C). Bake the kebabs for about 25 minutes, flipping them halfway through the cooking time.
- Once baked, let the kebabs cool slightly before serving. Enjoy warm with dips or a fresh salad.
