Step-by-Step Instructions
  1. Start by forming the ground chuck into 1/3 pound balls and refrigerate for 30 minutes. Thinly slice the onions and cook the bacon until crispy.
  2. Blend mayo, ketchup, mustard, chopped bacon, Worcestershire sauce, vinegar, all-purpose rub, and red pepper flakes in a bowl. Refrigerate for 15-20 minutes.
  3. Heat a griddle over medium-high heat, add avocado oil, and smash burger balls into patties. Season and cook for 3-4 minutes.
  4. Flip the burgers, add mustard on top, and place Pepper Jack cheese on each patty for about 3 minutes to melt.
  5. Toast the burger buns on the griddle for 2-3 minutes until golden brown.
  6. Spread Baconnaise sauce on the bun, stack two burgers, add more Baconnaise, and top with the other bun.
