- Heat cooking oil in a large pot over medium heat. Add onions and sauté for 5-7 minutes until golden.
- Add black cardamom, black peppercorns, and cloves to the pot. Stir for 1-2 minutes until fragrant.
- Add chopped tomatoes, ginger, garlic, salt, red chili powder, turmeric, cumin, and coriander. Cook for 5-7 minutes until tomatoes break down.
- Add ground beef to the pot, breaking it apart while cooking for 8-10 minutes until browned.
- Pour in water to keep the mixture moist, cover, and reduce heat to medium-low for 15 minutes.
- Uncover pot, increase heat to evaporate excess moisture for about 5 minutes.
- Add potatoes and water, cover and simmer for 15 minutes until potatoes are tender.
- Taste and adjust with water if needed, stir in garam masala, and simmer for 2-3 minutes.
- Garnish with fresh coriander and green chilies. Serve warm with roti or basmati rice.
