Step-by-Step Instructions
  1. In a large pot over medium heat, pour in olive oil. Once heated, add ground Italian sausage, breaking it apart. Cook for 5–7 minutes until browned.
  2. Stir in chopped onion and sauté for 3–4 minutes until it becomes translucent. Add minced garlic and cook for an additional 1–2 minutes.
  3. Pour in chicken broth and water, stirring to combine. Then, add Alfredo sauce and bring to a gentle boil.
  4. Break lasagna noodles into pieces and add to the pot. Sprinkle in dried basil, oregano, red pepper flakes, salt, and pepper. Simmer for 8–10 minutes.
  5. Remove pot from heat. Stir in mozzarella and Parmesan cheese until melted.
  6. Add dollops of ricotta cheese over the top and let it warm through.
  7. Ladle the soup into bowls, garnishing with fresh parsley.
