Step-by-Step Instructions
  1. Prepare the ingredients by mincing garlic, chopping shallot, and cubing mozzarella.
  2. Season the chicken with salt, black pepper, garlic powder, and paprika.
  3. Heat olive oil and butter in a skillet until shimmering.
  4. Cook the chicken for 5 minutes on each side until golden brown.
  5. Sauté garlic and shallots for 2 minutes until fragrant.
  6. Deglaze skillet with white wine, simmer for 2 minutes.
  7. Add salt, black pepper, dried basil, and tomato paste; cook for 1 minute.
  8. Stir in chicken broth and cherry tomatoes; bring to a boil and simmer for 5 minutes.
  9. Combine chicken into the sauce, add chopped basil and mozzarella.
  10. Simmer for 5 minutes or bake at 400°F for 10 minutes until mozzarella is bubbly.
