For the Sorbet
  • 3 cups Frozen Mixed Berries Ensure they are completely frozen for best texture.
  • 2 tablespoons Lemon Juice Bottled juice works perfectly if you're short on time.
  • 1/2 cup Icing Sugar Opt for granulated sugar if icing sugar isn’t available.
  • 2 large Egg Whites Whipped to soft peaks; can substitute with aquafaba for vegan option.
Optional Garnishes
  • 1 cup Fresh Berries Use seasonal varieties for the best taste.
  • 4 cookies Buttery Shortbread Cookies Pairs beautifully with the sorbet.
  • 2 sprigs Fresh Mint Leaves Adds a refreshing finish.

Equipment

  • Blender
  • Mixing Bowl
  • Airtight container

Method

Step-by-Step Instructions
  1. Start by measuring out your frozen mixed berries, ensuring they’re completely frozen for the best texture. Place them into a blender.
  2. Add a splash of fresh lemon juice and a sprinkle of icing sugar to the blender with the berries. Blend on maximum speed for about 30 seconds until smooth.
  3. In a separate bowl, whip your egg whites to soft peaks. Gradually pour the whipped egg whites into the berry mixture while blending on low speed for another 20 seconds.
  4. Transfer the mixture into a chilled container, smoothing the top for even freezing. Cover tightly and place it in the freezer for at least 1 hour.
  5. When ready to enjoy, take it out of the freezer and let it sit at room temperature for 5-10 minutes before scooping.
