- Preheat your oven to 350°F (175°C) and prepare a 13 x 9 inch baking dish with vegetable spray.
- Mix the Strawberry Cake Mix, Guava Nectar, Eggs, and melted Coconut Oil at low speed for 30 seconds, then on medium-high for 2 minutes until smooth.
- Pour the batter into the prepared baking dish and bake for 24-26 minutes. Check for doneness with a toothpick.
- Let the cake cool completely on a wire rack.
- Beat the Cream Cheese until fluffy, then add Granulated Sugar and Vanilla Extract. Fold in the Cool Whip and refrigerate.
- Spread the cream cheese layer evenly over the cooled cake and chill for about an hour.
- For the guava gel, combine Guava Nectar, Granulated Sugar in a saucepan and bring to boil. Mix the Cornstarch and Water to form a slurry, whisk in, and cook until thickened.
- Once cooled, pour the guava gel over the cream cheese layer and chill again for at least 30 minutes to set.
