  • 125 g Plain Flour Essential for structure and lift
  • 2 pieces Eggs Free-range medium for best flavor
  • 100 ml Milk Any type, including non-dairy options

For the Oil
  • 1 tsp Sunflower/Vegetable Oil Can substitute with lard or beef drippings

Method
 

Directions
  1. Preheat your oven to 220°C fan / 240°C / 475°F / gas mark 9.
  2. In a mixing bowl, sieve the flour, whisk in eggs and milk, and season with salt and pepper. Mix until smooth and let rest for 10 minutes.
  3. Add oil to a muffin tray and heat in the oven for 10 minutes until shimmering.
  4. Pour the rested batter into each section of the hot tray, filling halfway.
  5. Bake for approximately 15 minutes without opening the oven door.
  6. Carefully remove and serve immediately.
