- Preheat your oven to 220°C fan / 240°C / 475°F / gas mark 9.
- In a mixing bowl, sieve the flour, whisk in eggs and milk, and season with salt and pepper. Mix until smooth and let rest for 10 minutes.
- Add oil to a muffin tray and heat in the oven for 10 minutes until shimmering.
- Pour the rested batter into each section of the hot tray, filling halfway.
- Bake for approximately 15 minutes without opening the oven door.
- Carefully remove and serve immediately.
