  • 1 tablespoon Olive Oil or any neutral oil
  • 1 medium Onion, minced substitutes: shallots or green onions
  • 2 cups Mexican Shredded Beef leftover beef or shredded beef of your choice
  • 1 can Canned Green Chiles or diced jalapeños for extra heat
  • 1 cup Finely Shredded Cheese Monterey or cheddar cheese
  • to taste Salt
For the Taquitos
  • 12 pieces Corn Tortillas Mission Super Soft Corn tortillas preferred, or flour for gluten-free

Method
 

Preparation Steps
  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add 1 minced onion and sauté for 2 minutes.
  2. Incorporate shredded beef, canned green chiles, and salt, cooking until liquid evaporates, about 7-10 minutes.
  3. Allow mixture to cool slightly, then stir in shredded cheese.
  4. Preheat oven to 400°F (200°C). Line a baking sheet with foil and spray with cooking spray.
  5. Bake 12 corn tortillas in the oven for 4 minutes to soften them.
  6. Fill each tortilla with about 2 tablespoons of the beef mixture and roll tightly, seam-side down on the baking sheet.
  7. Bake the taquitos for 15 minutes, then flip them and bake for an additional 10 minutes until golden brown and crispy.
  8. Let them cool for a couple of minutes before serving. Enjoy warm with guacamole or hot sauce.
